INGREDIENTS
6-7 Good Quality Tomatoes
1 Green Pepper
1 Cucumber
1/2 Onion
1 Clove of Garlic
60 ml Extra Virgin Olive Oil
Sherry Vinegar
Salt & Pepper
METHOD
Skin the tomatoes then cut them into 4 slices cutting out the core.
Core and de-seed the pepper and slice.
Peel and slice the Cucumber and skin and chop the garlic
Add tomatoes, pepper, raw onion, garlic, salt and pepper and add to the blender and blend.
Once blended add the vinegar then turn the blender down low and slowly add the olive oil.
Add the vinegar and adjust the seasoning, if the soup is too thick add a little cold water.
Refrigerate and when ready to serve chop a few of the veg to sprinkle on top with a drizzle of olive oil.
